Simon visits a specialist

Simon had his doctor’s appointment today and it seems that he will be having some test done next Wed. The Dr. (who is great and doesn’t just nod his head when we tell him Simon’s symptoms) is trying to narrow down what Simon has, or doesn’t have. He will be doing a colonoscopy and endoscopy [...]

What do you do when your kid is sick?

Simon has not been feeling well for quite awhile. We thought that giving up Gluten was the key, but apparently not. I took him to the Dr. last week after a month of severe stomach aches, fatigue, weight loss and more. The doctor thought that it might be allergies and prescribes Nasanex….I kid you not. [...]

Loss of focus

My research paper is taking over my life; it’s all I can think about. Well…. almost all I can think about.
I wonder when we’ll see Brad Pitt’s twins. Will my house be clean….ever? What are we having for dinner? The fact that Simon has requested food (at band camp) and I am now thinking [...]

Gluten Free Pizza and Roll Recipe

We are having BBQ Chicken Pizza for dinner, and here is the GlutenFree dough that I am trying.

Gluten is an evil thing

I’ve been glutenized! I knew I was in trouble when I had a hard time focusing in English this morning, I was so tired and feeling worn out. I came home and slept for three hours and feel even more tired and worn out. Usually when this happens it’s not just from eating one [...]

They always wait until I am in the pool to poop

I’ve been trying to kick my dinner meals up a notch or two this week. Monday night we had gluten free soy/ginger marinated pork, white rice and Edamame. Tuesday it was ham with gluten free 4 cheese mac and cheese and sweet potatoes. Wed night, hmm I am missing a night, oh well. Last night [...]

Best chocolate chip cookies

If you have gone Gluten Free and you really miss chocolate chip cookies, I have the solution! I took a fantastic cookie recipe and modified it; it’s so good that you regular folks will want to make the gluten filled version. Trust me either way these cookies rock!
2 sticks of Land O Lakes (salted) butter, [...]

Two Glutenless recipies in one post

Good Friday is here and that means that Easter is in 2 days, how did that happen? This Easter Bunny isn’t ready yet and needs to hit up Super Target and Old Navy.
Speaking of Super Target, my friends told me yesterday that they sell butt-loads of gluten free stuff (at least in my towns). [...]

Middle school girls can be mean

I survived my cheer weekend with 18 11-14 year olds. I am wiped out and thinking about getting a cold. Liv did incredibly well at the comp and I was so proud of her, she hit all her stunts and tumbling. Her team didn’t make it to finals but we expected that, so for us [...]

That’s going to leave a mark

Today is Ash Wednesday and the only reason I remembered this is my friend Norma was walking around all day with an ashy mark on her forehead. I think that going gluten less has made it possible for me to not give anything up for Lent and to feel good about it. So there it [...]
